OUR OIL
The olive trees are of different varieties: Leccino, miller, Moraiolo, Pendolino, Lazzero. The olive harvest is manual and only for a few years with optimized mechanical aids. The best time to harvest the olives is always from October to December, depending on the more or less good years. The oil mill located in the middle of ulivete allows squeezing in the day to the great benefit of quality. The oil press is of the continuous type, with two-phase extractor.
All accompanied by a washing machine and defoliant. The low temperature pressing is personally followed by Orlando Pazzagli, making use of specialized advice of an expert olive oil extraction. Following the oil is analyzed and tasted with panel test method to verify the degree of acidity, organoleptic values and olfactory, and stored in modern air-conditioned cellar.
